There were many speed bumps in creating this Random Berry Cobbler. I didn't have any baking powder, vanilla, or the mass of berries typically required for such a recipe. I improvised! Normally, I only measure carefully when baking; you have to understand that recipes such as this are super flexible and wicked hard to mess up! Therefore all amounts are approximate. Make it however you like!
Random Berry Cobbler
Ingredients:
However many BERRIES you have (Blueberries, blackberries, raspberries, strawberries)
4-6 Tablespoons BUTTER
Splash of LEMON JUICE or LIME JUICE (freshly squeezed, please! Take advantage of the optimum citrus season!)
2 Tablespoons HONEY (I like mine from the bear)
1 Handful BROWN SUGAR (Light or dark)
1 Cup GRAHAM CRACKER CRUMBS
1/2 Cup FLOUR
Sprinkle CINNAMON
Preheat oven to 375
Rinse and pat dry berries.
Halve the citrus. I used a few Key limes because that's what I have (and they're cute).

Next, combine berries and citrus juice in an 8 inch, well-buttered baking dish.
Add honey.
Sprinkle evenly with handful of brown sugar.
Set aside. In a separate, medium bowl combine flour and graham cracker crumbs.
Cut butter into small pieces. Combine with flour/graham cracker mixture.
Sprinkle this mixture on top of the prepared berries.
Bake for 15-20 minutes until the berries are bubbling and making you hungry.
I ate a pretty big piece.

ReplyDeleteLooks pretty tasty. Thats pretty awesome you have those berries growing in your back yard, they wouldnt last long enough to make a cobbler if i had em.
